Liba is essentially a falafel bar that got its inspiration from the falafel shops of Amsterdam. Their falafels, salads, cakes, and cookies are mostly organic and fresh. All their take-out products are compostable and like Green Truck On The Go, their oil gets turned into bio-fuel at the end of the day. The falafels cost around $8 and bar has rather interesting toppings such as: Red Cabbage with Black Sesame Seed, Olive-Orange Relish with Thyme and Spiced Carrot Ribbons.
